Salted caramel brownie

Sandwich cookies

 

Serves 12

Preparation 30 minutes

Cooking time 20 – 25 minutes

 

Ingredients

Brownie
700g dark chocolate
80g butter
4 eggs
1 cup caster sugar
2 tsp vanilla essence
¾ cup plain flour
½ tsp baking powder

Salted Caramel Frosting
1 ½ cups caster sugar
½ cup water
1 cup cream
300g butter

 

Method

Brownie
Preheat oven to 180°C. Melt chocolate and butter in microwave for 90 seconds. Beat eggs, sugar, and vanilla. Add flour, baking powder, and chocolate mixture to egg mixture and beat until light and fluffy (takes a few minutes). Put into fridge and allow to cool for 30 minutes. Spoon 50 grams of mixture onto a baking tray and repeat five times until you have six piles of mixture. Ensure these are spread out. Cook for 15 minutes or until cracks appear on top. Allow to cool before moving them.

Salted Caramel Frosting
Melt sugar and water in a pot and bring to a slow boil until sugar has dissolved, starts browning around the edges and becomes golden in colour. This will take about 5 minutes. Take off heat and pour in cream and butter. Whisk quickly and put back on low heat until melted and smooth. Place the caramel in fridge to cool completely. Once cool, beat for a couple of minutes until it reaches the consistency of thick, creamy frosting. Spread 2 tablespoons of caramel frosting onto one half of a brownie biscuit and sprinkle with sea salt. Sandwich together by placing the other half of the brownie biscuit on top.
