Lemon Curd & Cream Cheese Friands

Ingredients

200g butter, melted
9 egg whites
2 lemons, juice and zest
2 cups icing sugar
¾ cup rice flour
2 cups ground almond meal
280g cream cheese
280g lemon curd
Icing sugar, to dust

Tip: Recipe requires a friand tray

 

Method

Preheat oven to 170°C. Place butter in a small bowl and microwave until melted. In a large bowl, whisk egg whites for 20-30 seconds until white and frothy. Next slowly pour the melted butter into the egg whites, followed by the lemon juice and zest.

Sift the icing sugar and rice flour into a large bowl and stir in the ground almonds. Add the dry ingredients to the wet mixture, gently whisking until smooth. Grease a friand tray. Pour the friand mixture evenly into the tray and bake for 14 minutes.

Take friands out of oven and spoon 1 tbsp of cream cheese into the centre of each, leaving half inside and half sticking out of the friand. Put the friands back in the oven and cook for a further 9 minutes.

 

Assemble

Leave friands to cool for 5 minutes then remove from tins and garnish with 1 tbsp lemon curd and a dusting of icing sugar.
