Banana bacon french toast
Ingredients
3 large eggs
55g caster sugar
80ml cream
185ml milk
1 tsp cinnamon
½ tsp nutmeg
Brioche loaf or bread of your choice
Bananas, sliced
Bacon, cooked
Maple syrup, to serve
Icing sugar, to serve
Method
Cut the bread into 2.5cm thick slices. Place eggs, sugar, cream, milk into a bowl and whisk well to combine. Add the cinnamon and nutmeg and mix through well. Soak the bread quickly in the egg mixture. In a heated and buttered pan, cook the slices on a gentle heat. Flip when it has coloured nicely and cook the other side until golden. Layer the toast with bananas and bacon and top with maple syrup and icing sugar.
